One of Fujian's Black Kongfu Teas is the Bailin Black from Northern Fujian (the other two Black Kongfu Teas are Zhenghe Black and Tanyang Black), The villages Bailin, Tanyang and Zhenghe are all located in the northern Fujian Minbei area. Kongfu Tea: a skillfull process
Processing this tea is a very complicated process, which is a well-kept secret for hundreds of years already. Just some tea masters have the skills to produce this tea. They wait till the temperature is right for hand-picking the leaves, just select from plantations on a high altitude (500-800 meter above sea level), select the most suitable leaves after picking (best quality leaves, considerable amount of young tea buds), control the withering process and execute the fermenting process accoding to a recipe used for ages within their family.

The result is a black tea so full of aromas that this tea deserves it to drink it pure. Although people all over the world have a long history of drinking black tea, this kongfu tea will change your idea of what black tea is. Not just a beverage, but a tea you handle with care and enjoy every single sip. When you take a carefull look at the leaves, you'll notice many young golden tea buds and hardly any broken leaves. This is quality leaf tea.
Brewing Instructions:
All high quality leaf teas, like this black kongfu tea should be steeped with water below boiling temperature. Best temperature is around 80 degrees Celsius. When you use boiling hot water, the tender leaves will be damaged and will return the damaging with a rather bitter taste. A waste of the tea master's skills. Find your own perfect infusion by using three to four grams tea leaves at the start and infuse the tea for around one minute. Brew the tea fro more than one minute (up to three) if you would like to try a stronger taste. If the result is still not strong enough, start gradually adding more tea leaves. However, the taste of high quality tea is in general rather subtle. Give yourself some time to get used to this and enjoy.
